When I think of summer desserts I often think of something that is light, airy, easy, and sometimes frozen. Who really wants a dessert that is heavy on your stomach when you are already uncomfortable in the summer heat. One top of that no one wants to turn their oven on 350 for very long when it is already 90 outside!

Another month has gone by and I am starting to get back on track with everything. Sean has been back to work for two weeks now and even with everything starting to open back up it is still a little scary. Thankfully Sean’s work is taking guidelines seriously because they know some of the crew have vulnerable people at home. I am a little sad that we don’t get to spend as much time together but thing have to start to go back to normal again.

As you know Sean and I recently got an RV and I posted about some of our RV Inspiration for when we start to fix it up a little. To no ones surprise I also have an Amazon wish list of accessories I want to buy for the RV. Planning a camping trip in a RV has made me realize that there are a few things that we don’t have because tent camping is a little bit different than going in an RV.

Today I wanted to talk a little about finances and in the current state of our economy during the pandemic we really need to keep an eye on how we are spending more than usual. In this post I am going to focus more on debt because keeping the debt we already have in check will help in the long run.
Something I use all the time is a debt snowball. What is a debt snowball? If done right a debt snowball is like rolling a snowball down hill, as it rolls it gets bigger and bigger.
When it comes to debt snowball it is the process of paying more than the minimum payment on your smallest debt while paying your minimum payment on the rest of your accounts. Once your smallest debt is paid the month amount is then added to your next debts payment. This strategy makes paying down you debts faster because you are making larger and larger payments as you move along.

One room I haven’t really shared any wish lists for is our kitchen. Mostly because we aren’t 100% settled on how to remodel it. As with any relationship, our wants sometimes clash with the other person and the kitchen is one of those.
In my opinion I think that the person who spends most of their time in the space should get the last say. So, when it comes to the kitchen, the person who cooks, cleans, and cares for the space the most is me. As the person who does all the cooking and cleaning in the kitchen I want to remodel in a way that functions for me. For example, I want to place items in cupboards that would make it easier for me to grab while I’m cooking or cleaning but Sean doesn’t like it. My argument is that he isn’t even using it so why would it have to be convenient for him?
