These taco-stuffed mini peppers are fantastic and I am so happy that this recipe was the first one I did for my first cookbook challenge recipe. If you are looking for a fresh, crisp, and even keto friendly taco recipe this one is it!
As part of the cookbook challenge I want to include some of my thoughts on the recipe.
- Did I change anything?
- Yes. Instead of the individual seasonings I just used the same about in taco seasoning. I also didn’t use cilantro, I am one of those people that cilantro tastes and smells like soap.. so it’s a no no in my house.
- Was it harder than the instruction lead me to believe?
- No. The instructions in this cookbook are really easy so far. Simple planned out steps with images.
As I have stated before in other posts about recipes, my boyfriend Sean is very picky when it comes to food. So I wanted to include his ratings on recipes that he is willing to actually try.
Sean gave this recipe a 5 out of 5 stars. Stating, “This is awesome. Make this a regular meal!”
